Weekly Meal Plan

Sunday: Homemade mac-n-cheese, chicken breasts on the grill, salad

Monday: "Sheet pan dinner" = TONS of veggies (squash, bell pepper, onion, potato) seasoned and cooked on a sheet pan in a super hot oven (450ish); seasoned chicken sliced up and added to pan for the last 15-20 minutes.

Tuesday: "Auntie Maggie's chicken" - my BFF told me about this and it's so easy and delish- Chicken breasts in the crock pot with a sprinkling of chicken taco seasoning, salsa, some diced onion and a few tbsp of water cooked on high for 5.5 hrs; shredded and served in taco shells, a quesadilla, nachos, etc.

Wednesday: "Drunk Bird"; This is my Mom's recipe of chicken cooked in a white wine sauce (+ mushrooms and scallion) served with egg noodles. SO good.

Thursday: Steak on the grill; homemade popovers, and zucchini (I don't love beef so I am going to make a quesadilla with some leftover chicken and veggies as an alternative)

Friday: TakeOut / Pizza

Also....is January over with yet!? Holy moly this month has felt LONG!
