Meal Planning

We are really big meal planners in our house. For one, we like to limit take-out to a 'once-a-week' treat which usually ends up being Friday or Saturday night pizza. It also ends up reducing wasted food, eliminating stress, and being more budget-friendly to plan ahead as much as possible. I do a weekly grocery trip on Sundays and usually write out a meal plan right before I go.

Sunday is also when I can usually make a large batch of something like a pasta salad, homemade chicken salad, or mac and cheese that can be an easy grab-and-go option during the week.

Below is our "menu" from this week. I am going to post these from time to time to have ideas to look back on when I need to change things up a bit.

Sunday: We grilled about 6 chicken breasts; Dinner was chicken caesar salads with a buttered roll on the side and the kids ate some homemade mac and cheese
(On Sunday I also made a large batch of homemade chicken salad with rotisserie chicken and set the extra rotisserie chicken aside in the fridge)

Monday: Leftover chicken breasts chopped up and tossed in a skillet with veggies (red bell pepper, squash, onion, mushrooms, etc) - served over bow-tie pasta

Tuesday: Leftover rotisserie chicken (sensing a theme?!) and veggies in a wrap (large flour tortilla) with lettuce, mozzarella, and pesto. Served with oven-baked fries

Wednesday: Tim grills hamburgers and hot dogs outside

Thursday: Chicken and veggie fajitas (small corn tortillas) with a side of mexican rice or beans

Friday: Pizza night! Take-out
