Weekly Menu-Planning

Another week, another menu of planned-in-advance meals for the chaos that is the Snee Household at 5:30pm:

Sunday: I bought two organic rotisserie chickens during my grocery trip on Sunday (the Nature's Promise ones at Giant are excellent). One was served over Balsamic Vinaigrette salads for Sunday dinner (+ a buttered roll on the side) while the other was shredded and put in Tupperware for Mexican night on Tuesday.

Monday: It was rainy and dreary, so tonight I made my Mom's special recipe we refer to as "drunk bird" ... It is a family favorite and is a chicken / mushroom dish in a white wine sauce served over egg noodles. It's 'lick-the-plate' good!

Tuesday: I seasoned the extra shredded rotisserie chicken and tossed it in a skillet with veggies. Some of us had fajitas, some had quesadillas, and leftovers are delish for lunches.

Wednesday: Mama had to bake cupcakes for Maddie's birthday celebration at daycare tomorrow so Daddy grilled burgers and hot dogs. The kids are happy for this one! I also made a pot of homemade mac and cheese to use up some of the cheese in the fridge that I had overbought :)

Thursday: We clean out the fridge and have a free-for-all night of leftovers plus an Aldi bake-at-home pizza for backup. Gotta fill those bellies because we leave at zero:dark:thirty for a family vacay!
