Meal Planning

I figured I would share our weekly menu for anyone in need of some meal-planning inspo :)
Per usual, nothing fancy but fan favorites to fill everyone's bellies:


Sunday: Chicken and mushrooms in a white wine sauce (my Mom's delicious recipe that we call 'drunk bird') with egg noodles. It was chilly and rainy on Sunday night, so this was a perfect comfort-food meal to start the week.

Monday: Marinated chicken on the grill, a big ol' salad, and rice pilaf

Tuesday: Leftover chicken + chopped veggie (zucchini, onion) quesadillas; Charlie baked yummy pumpkin carrot muffins for dessert

Pumpkin carrot muffins = fall yumminess


Wednesday: Tim grilled burgers and hot dogs + mac and cheese and tots (I made myself a pizza bagel with a leftover bagel b/c I was hangry and didn't want meat.....)

Thursday: Chicken cutlet sandwiches: seasoned chicken breasts, colby jack cheese, ranch dressing (Tim only), and lettuce on a fresh loaf of french bread + a salad (For the kiddos I just dissected this on their plates and gave them chicken, cheese, and a veg); For dessert I made a batch of 'energy bites' -these are the ultimate snack that we LOVE (I omit the vanilla extract because I don't find it makes a difference either way)

Energy bites- these are the perfect snack and SO delish (store in fridge)


Friday: Take-Out Pizza! TGIF!!!
